Raw Mushroom and Tomato Salad
Looking for a delicious new salad to see you out of summer and into cooler months? Love making the most of seasonal produce? Then look no further than our flavour-packed raw mushroom and tomato salad! The go-to salad of our cafe super-star Georgie, we couldn’t help but share this recipe with you all.
So just what will you need?
To make this delicious salad, you don’t need any complex ingredients or equipment. In fact, we’ve kept it super simple for you! All of the organic produce and dressings used in this recipe can be purchased through your local Market Organics Store or online at Home Fresh Organics. We are particularly fond of the Brisbane Valley Organic Cherry Tomatoes at the moment! Sourced from a family-run farm just outside of Esk, these little guys are bursting with flavour!
1 red onion, finely diced.
1 red capsicum, diced.
1 zucchini, diced.
300g button mushrooms, quartered.
1 punnet wild rocket.
1 punnet cherry tomatoes.
1 bunch chopped parsley.
4 tbspn Ozganics Creamy Garlic Dressing.
4 tbspn Olive Oil.
4 tbspn Ozganics Light Balsamic Dressing.
2 tbspn Lemon Juice.
Salt and Pepper to taste.
Method: (It’s as easy as 1,2,3)
In a large bowl, mix all salad ingredients excluding the rocket. Add dressing and toss ingredients until evenly covered.
To serve, create layers of wild rocket and mushroom salad mix in a bowl. Top with additional fresh herbs and halved cherry tomatoes. Season to taste.
