Mediterranean Chickpea Salad
When I started working at HomeFresh Organics I was constantly around people who love and eat salad every day! I wasn’t the biggest salad eater at the time but, over the years to follow, I was happily converted. Now I don’t look back!
One great salad that was passed on to me is this beauty. A chickpea salad that tastes incredible and is very simple to make! I just throw it all together, crumble a little delicious feta on top and serve. Hay presto! Magic! ✨ So this became one of my first salads and I thought I’d share with everyone today.
1 1/2 Cups of Chickpeas - Dried
Organic Balsamic Vinegar
1 Cup of Tomatoes - Diced
1 Cup of Organic Cucumber Lebanese - Diced
1/2 Red Onion - Diced
1/2 Cup of Parsley – Chopped
1/4 Cup of Feta Cheese - Crumbled
Dice the tomatoes, red onions, cucumber (to your preference) and place in a bowl with the chickpeas. Pour the balsamic vinegar into the bowl and toss the salad. Cover and let site in the fridge for approx. 20-30 minutes. This helps the all flavours to combine.
Once done, remove stems for parsley and chop or tear them up. Crumble or grate the feta cheese into the bowl along with the parsley and toss again. Then get your tummy ready for an easy yet delicious meal.
I’ve used cherry tomatoes before to get results and friends add olives. I often use these organic chickpea garbanzo beans (I will add it to the recipe link below). You can season with salt and pepper too, I don’t go for that myself but one thing I have done is to toss some pasta in with it. Great for BBQ’s or dinner parties. Just cook a little of your favourite pasta, add it to the salad and it’s almost like you have a whole new dish 😉 And if you’re vegan then skip the cheese!
